Tomato & Penne Pasta
This is a great mid-week recipe that can be rustled up using cans and packets of ingredients from your larder. Instead of penne, bow ties or fusilli (spiral) pasta could be used and my own kids enjoy it with a sprinkling of grated cheese.
1 tablespoon olive oil
1 onion, chopped
2 garlic cloves, crushed
½ teaspoon mild chilli powder
½ teaspoon smoked paprika (or sweet paprika)
1 teaspoon sugar
1 x 400g can chopped tomatoes
1 x 97g can tuna, drained
400g penne pasta
Grated cheese (optional)
Heat the oil in a saucepan and cook the onion for 3-4 minutes on a low heat.
Add the garlic and spices and cook for 1 minute.
Pour in the canned tomatoes, add the sugar and bring to the boil. Turn down the heat and allow to simmer gently.
Boil the pasta according to the packet instructions.
Drain the pasta.
Flake the drained tuna into the sauce and heat through.
Add a handful of fresh basil leaves to the pasta sauce.
Stir the pasta gently into the sauce and add black pepper to taste.
To serve, sprinkle over some grated parmesan or cheddar (optional).
