Thumbprint Cookies
This is a lovely easy recipe to make with toddlers.
Ingredients
225g self-raising flour
100g butter, cubed
100g caster sugar
1 egg
1 teaspoon vanilla extract
1 tablespoon milk
Jam or chocolate chips
Extra flour for dusting
Method
Preheat the oven to 220oC/200oC fan/Gas 6.
Dust two baking trays with flour.
Put the flour into a large mixing bowl and rub the butter in with your fingertips, until it looks like breadcrumbs.
Stir in the sugar.
Mix the vanilla extract with the egg in a bowl.
Pour the egg into the flour mixture and mix well with a fork.
Add 1 tablespoon milk and mash the dough with a fork until it starts to come together.
Use your hands to form the dough into a ball.
Flatten the dough on a plate and cut into 12 triangles.
Roll each triangle into a ball, place on a baking tray and push down slightly. Repeat until all of the dough is used up.
Make a deep thumbprint in each cookie. Make a little bigger if need be with your finger.
Fill each well with jam or chocolate chips.
Bake in the oven for 10-15 minutes until golden brown.
Remove the cookies from the oven with oven gloves, allow to cool for a few minutes on the trays, then transfer to a wire cooling rack to cool completely. The jam will be very hot when the cookies come out of the oven so be careful!!
