Super-easy Tomato Sauces



It is so easy to make your own tomato sauce and once you do you will never buy a jar again! The basic recipe can be modified to make Italian, Mexican and Moroccan versions. They are great with pasta, meatballs and enchiladas. The basic recipe is great on pizzas, sprinkled with dried oregano. This recipe make a large batch which can be frozen or kept for up to 5 days in a fridge.


Basic Ingredients:

1 onion

2 tablespoon olive oil

2 garlic cloves

2 x 400g can plum or chopped tomatoes

Pinch of salt and a good grind of black pepper

1 tsp balsamic vinegar or sugar


Method:

1. Peel and dice the onion.

2. Warm the oil in a large saucepan over a low heat and add the onions.

3. Cook slowly for 10 minutes until really soft.

4. Peel and chop or crush the garlic cloves and add to the onions and cook until you can smell the garlic oils (if adding spices add them now).

5. Add in the tomatoes, salt, a grind of pepper and vinegar or sugar.

6. Bring to a simmer and continue to cook on a simmer for 20 minutes, stirring occasionally.

7. Taste and add more seasoning as required (if adding basil or coriander leaves add them now).


Italian tomato sauce (good with pasta)

1 x tomato sauce + handful of ripped up fresh basil leaves


Mexican tomato sauce:

1 x tomato sauce

1 teaspoon dried oregano

1 teaspoon ground cumin

1 teaspoon smoked paprika


Moroccan tomato sauce (good with meatballs)

1 x tomato sauce

1 teaspoon cumin

½ teaspoon cinnamon

1 teaspoon paprika

Handful of chopped coriander leaves
