Spiced Oatmeal Cookies
These spiced cookies make a lovely little homemade gift for a special someone!
100g softened butter (not melted)
180g light brown sugar
1 teaspoon vanilla extract
125g plain flour
½ teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon ground ging
¼ teaspoon salt
75g porridge oats
Preheat the oven to 180oC fan/190oC/Gas 5 and line two baking sheets.
Cream together the butter and sugar.
Beat the vanilla extract and egg, with a fork, in a small bowl and add to the mixture. Mix well.
Sift the flour, baking powder and spices into the bowl and stir until combined.
Roll the dough into balls, 3cm in diameter, and place on the baking trays, with spaces in between.
Flatten down lightly with two fingers.
Place in the centre of the preheated oven for 15 minutes.
Remove from the oven wearing oven gloves and leave to cool on the tray for a few minutes.
Transfer to a wire rack and allow to cool completely.
Try adding 160g raisins for a fruity version.
