Sausage & Bean Cassoulet

There's a great depth to this recipe with layer upon layer of complementary flavours. With the right store cupboard ingredients you can turn simple and cheap ingredients into a gourmet dish


1 tablespoon vegetable oil

10 good quality sausages

1 red onion, chopped

1 courgette, chopped small

1 teaspoon mild chilli powder

2 garlic cloves, crushed

1 can chopped tomatoes

1 heaped teaspoon mixed herbs

300ml stock

1 tablespoon tomato puree

1 tablespoon Worcestershire sauce

1 dessertspoon brown sugar

Sprig fresh thyme (optional)


  1. Heat the oil in a large frying pan and fry the sausages for 10 minutes until golden.

  2. Add the onion and courgette and fry for a few minutes.

  3. Sprinkle in the chilli powder and heat through for a couple of minutes.

  4. Add in the garlic, chopped tomatoes, mixed herbs, stock, tomato puree, Worcestershire sauce and brown sugar. A sprig of fresh thyme can be added at this stage.

  5. Stir carefully to combine, bring to the boil then reduce the heat and simmer for 20 minutes, without a lid, stirring occasionally.

  6. Serve immediately with brown soda bread. Can be frozen for up to 3 months.
