The hardest part in making this sweet treat is waiting for it to set! You can literally add any sweet or bar of choice to this, keeping the weight of ingredients the same.
400g milk or dark chocolate or a mixture of both
125g golden syrup
100g mini marshmallows
200g digestive or rich tea biscuits
200g Crunchie bar/Malteasers/mini Smarties/mini eggs
50g white chocolate, for drizzling (optional)
Confetti sprinkles (optional)
Line a brownie tin or swiss roll tin with cling film.
Melt the chocolate, golden syrup and butter in a bowl over a saucepan of hot water. Alternatively, heat in short bursts in the microwave, stirring in between.
Break up the biscuits and Crunchie into small bits. If you are using Malteaser you can chop them in half. Marshmallows, mini eggs and mini Smarties can be left whole.
Fold the biscuits and sweets into the melted chocolate and butter and then pour into the prepared tin.
Refrigerate the rocky road until completely set. This can take up to 3 hours.
Drizzle melted white chocolate over and sprinkle some mini Smarties or confetti sprinkles over the top to add colour (optional).
