Mixed Berry Crumble
This is a quick and easy recipe using frozen berries to create a comforting autumnal dessert.
1kg bag of frozen mixed berries (blackberries, strawberries, raspberries)
75g butter, cubed
100g plain flour
50g demerara sugar
1 teaspoon cinnamon
½ teaspoon ginger
Preheat the oven to 200oC/180oC fan/Gas 6.
Defrost the berries by leaving in a bowl at room temperature for a few hours or in the microwave using the defrost setting.
Place the berries in a large ovenproof dish, drizzle over a couple of tablespoons of honey and coat the berries using a metal spoon to turn them over gently.
Place the butter and flour into a large bowl and rub the butter into the flour using your fingertips, until it resembles fine breadcrumbs. Do not over-rub.
Stir in the oats, brown sugar and spices.
Sprinkle the topping over the fruit evenly but do not be tempted to pack it down.
Bake for 35 minutes in the centre of the oven until crisp and golden.
Remove the crumble from the oven using oven gloves and serve with custard, whipped cream, Greek yoghurt or ice-cream.
