A sweet weekend treat for the kids using only 4 ingredients. Younger children will watch in amazement as the marshmallows melt over the heat to form a gooey consistency.
250g mini marshmallows
½ teaspoon vanilla extract
175g crisped rice cereal
Melt the butter and 200g marshmallows in a large saucepan over a medium heat.
Mix the cereal into the marshmallow mixture and stir in the remaining 50g marshmallows.
Spoon the mixture into a greased baking tin.
Use the base of a cup to firmly press the mixture in until it is level all over.
Allow to cool and firm up then cut into squares.
Keep in an airtight container for up to a week.
