Double Chocolate Cupcakes
This is the only chocolate cupcake recipe you will ever need!
140g self-raising flour
35g chocolate Chips
30g cocoa powder
2 large eggs
125ml cold coffee
125ml buttermilk (or add ½ tablespoon lemon juice to 125ml milk and leave for 15 mins to thicken)
105ml vegetable oil (don't use extra virgin olive oil as the flavour is too strong)
Preheat oven to 160oC fan/180oC/Gas 4. Line a muffin tray with paper cases.
Sieve the flour and cocoa powder into a large bowl and stir in the chocolate chips.
Whisk the eggs, buttermilk, cold coffee and vegetable oil in another bowl until smooth.
Pour into chocolate mixture and stir until mixture is just blended.
Pour the mixture into a large jug.
Fill paper muffin cases 3/4 full.
Bake in the preheated oven for about 20 minutes or until a skewer inserted into the centre comes out clean.
Remove the cupcakes from the oven using oven gloves and cool in the tray for 10 minutes before removing to cool completely on a wire cooling rack.
