Chocolate Chip Cookies

These are my children’s favourite cookies and they are irresistible when still warm! For a variation on flavour you could add the zest of an orange or swap the chocolate chip to dark or white chocolate, or both! White chocolate and cranberries, chocolate and raisins, lemon zest and blueberry, marshmallows or Smarties are all great flavour combinations.
100g butter, softened
125g soft brown sugar
1 teaspoon vanilla extract
200g self-raising flour
100g chocolate chips
Preheat the oven to 180 degrees Celsius/Gas mark 4.
Cream the butter and sugar together, with a wooden spoon, in a mixing bowl.
Beat the egg in a small bowl and mix in the vanilla extract.
Pour the egg mixture into the butter and sugar and mix to combine.
Add the flour and chocolate chips and mix until you get a stiff dough.
Place into the fridge to chill for 30 minutes.
Remove from the fridge and shape the cookie dough, with your hands, into small balls about 4 - 5cm in diameter.
Place the balls on baking sheets lined with greaseproof paper. The dough will make approximately 18 cookies. Make sure you space them out well because they will spread in the oven.
Bake the cookies for 12-15 minutes until golden brown.
Remove from the oven using oven mitts and allow to cool for 5 minutes before transferring with a palette knife to a wire rack to cool completely. The cookies will be soft when they come out of the oven at first but harden as they cool. Enjoy!!
