This is a really easy and tasy recipe for lunch or dinner. The kids will love chopping up the vegetables and rolling up their tortilla wraps like little blankets. You can use fresh or frozen onions and peppers and if your kids are not too keen on spice, leave out the chilli powder or fajita spice mix and add sweet chilli sauce to the adult's dishes when serving up. These are great with Greek-style yoghurt and/or grated cheddar cheese. This recipe serves 4.
2-3 chicken breasts chopped into chunks
1 tablespoon oil
1 red, green and yellow pepper (or use whatever you happen to have in the fridge)
1 onion, chopped
1 clove garlic or 1 teaspoon cheat's garlic from a jar
1/2 teaspoon smoked paprika
1 teaspoon fajita spice mix/1/2 teaspoon chilli powder (optional)
1 can chopped tomatoes
To serve: Greek-style yogurt, cheddar cheese sweet chilli sauce
Cover the chicken pieces with water, bring to the boil, cover and simmer for 15-20 mins in a shallow frying pan.
Drain the chicken (keep the water to make soup with) and place on a plate.
Heat the oil in the same pan and fry the onion and peppers for a 5 mins ona medium heat.
Add the chopped onion, sliced peppers, crushed garlic and smoked paprika and cook for 3 mins. Add the spice now if using.
Add the canned tomatoes to the pan and heat through until bubbling.
Add the chicken back to the pan and simmer for a futher 10 mins until the sauce thickens.
Spoon the chicken, peppers and sauce onto warm tortilla wraps.
Add Greek-style yoghurt, grated cheddar cheese and sweet chilli sauce if you wish.
Fold over the wraps and serve!
